Buck Hill began as a quiet whisper out of Barry’s Bay—an old tale of a man who walked the forest by lantern light, chasing something he couldn’t name, but refused to give up on. We took that spark of folklore and made it our own: a symbol of the unknown ahead, and the pull to keep going.

That’s the spirit we’re building Still Waters around going forward. Every grain we choose and every bottle we fill is part of the pursuit—patient, deliberate, and unwilling to settle. We move with purpose, always looking for the next moment of clarity, and the next great whisky waiting to be discovered.

Buck 3

The Barry's Bay legend in the bottle: deliberate, persistent and unwilling to settle.

Crafted by Lucas Kusiak under the guidance of Don DiMonte, Buck 3 brings together Simcoe County corn and Ontario rye with a subtle touch of pure Ontario maple syrup from Setting North Maple Syrup. Carefully selected ex-bourbon barrels from Wild Turkey and Heaven Hill add depth without hiding the spirit.

Oak, vanilla, cracked pepper, orange peel and caramel, with balanced spice and a natural sweetness that carries through the finish.

Straight Corn Whisky · Eight Years Old

Buck 8

Ontario grain and Ontario time—honest, bold and proudly local.

Buck 8 begins with approximately 99% corn grown in Simcoe County and 1% malted barley for natural conversion. It was milled, mashed, distilled and matured entirely in Ontario, spending eight full winters and summers in genuine ex-Wild Turkey bourbon barrels.

Aroma

Sweet corn, toasted oak, vanilla bean, honeyed caramel, coconut, orange peel, spice and char.

Palate

Rich cornbread, toffee and crème brûlée, moving into roasted nuts, soft leather and peppery barrel spice.

Long, warm and gently drying, with brown sugar, vanilla, toasted coconut, oak, tobacco and spice.

Crafted on a traditional Christian CARL copper pot still and bottled as a single-cask expression. When a barrel shows real depth, balance and a character shaped by its original spirit and years of quiet aging, it is bottled as it is—no blending and no shortcuts.
